Healthy carrot cake muffins

I mean, look at these beauties! They are super delicious and healthy, a win win! I was looking for a healthy treat after my operation for the sinuses and this was what came to my mind! I’m so happy with the result being my first try making them!

Here is my recipe of a healthy version of the carrot cake muffin:

Ingredients

250 ml of buckwheat flour

250 ml of rolled oats

2 tsp baking powder

1 1/5 tsp cinnamon

1/5 tsp cardamom

2 tbsp melted coconut oil

2 tbsp flax meal + 5 tbsp water

2 tbsp Greek yoghurt

250 ml oat milk

1 cup of shredded carrots

2 tbsp honey [if you want the muffins sweeter you can add 2tbsp more]

1 handful of chopped walnuts

Directions

1. Start making the flax meal by blending the flax seeds in a blender if you don’t have them grounded from before. Let the flax seeds soak in water for 10 minutes in the fridge. This is the vegan substitute for egg!

2. Mix all the dry ingredients together, make sure the oats are grounded so the batter has a smoother texture.

3. Blend the wet ingredients together with the dry and stir.

4. Add the carrots to your batter and the chopped walnuts. You can also add raisins if you want. Then distribute the batter in muffin tins.

5. Put the oven on 220 degrees Celsius and let the muffins bake first for 8 minutes, that will make them rise. After put it down to 180 degrees and the muffins should be ready by 12 minutes!

6. Let them cool down and enjoy!

Ps: they are gluten free and sugar free so everyone can enjoy them!

Waffles for breakfast anyone?

Yes, please! These waffles are made with sweet potato actually! It turned out to be a winner in my eyes, I really liked this version. So what better way to start the day by enjoying yourself a lovely breakfast?! It’s my favorite meal of the day, so I always look forward the night before, getting excited haha. I believe it’s so important to start the day well and you can do that by this easy step, making yourself an awesome breakfast. Find yourself excited and make different kinds of breakfast so you don’t get bored. That’s why I changed it up by making waffles for breakfast;)

Pizza your way!

Hell yeah! It’s so much better doing your own pizza and decide what ever toppings you want! I made my pizza with tomato sauce as base, then topped with some “Jarlsberg” cheese, aubergine, squash, red onion, sun dried tomatoes, pine nuts, rucola and slices of avocado! Haha, I just added all the delicious toppings I could think of, and that ended up being many.. But it was not over the top, the pizza was full of flavors and incredibly tasty!! Hope this has inspired you to make your own pizza, make it your way:)

Burger joint

Today I really felt for a good burger and sweet potato fries, which I found at “Burger joint” restaurant. I choose a vegetarian spicy falafel burger with tsatsiki dressing. It was exciting to try a new burger version I have never tried before and I really liked it! Oh and btw a vegetarian version is as good as a beef burger, or even better if I must say. Also it’s better for us and our planet to eat a vegetarian version since the making of beef contributes to greenhouse gas emissions.

They are located at Aker Brygge in Oslo with the address Holmens gate 3. This area is located in the former shipyard area of Akers mechanical workshop, which was closed in 1982. They have still kept that charm till today where you experience an industrial architecture with buildings made of brick. But with that said, they have modernized and upgraded the place, harmonizing old and new architecture together. Aker Brygge is where you will find shopping, cafés and restaurants, and ice cream parlors alongside the waterfront promenade.

It was lovely weather today and that definitely gave me the feeling of summer! I couldn’t resist and not complete my moment without an ice cream to top it all! I love “soft ice” with sprinkles on. It’s a must to have that when you come to Aker Brygge, so don’t leave without having one first!

Oslo • Raw

Today I ate for the first time at Oslo • Raw and was such an enjoyable experience. I ordered a womba latte and brunch from their menu. On the plate it’s açaí bowl, two raw cakes – one made of raspberry and the other one a similarity to snickers! And you get a cracker with avocado on top, what more can you ask for! The womba latte was different and new, it’s cacao mixed with chaga mushroom. Yes I know, you will get skeptical, but honestly you can’t taste fungi so don’t worry, it was really nice:) Besides chaga mushroom is a “bonus”, because it contains antioxidants which strengthen our immune system, stabilizes the blood sugar and relieves cold symptoms and eases allergies!Oh and I loved the card which was on the table, the quote was such a great reminder, so I have to pass it forward to you.

Faith is taking the first step even when you don’t see the full staircase.

Barcelona

Barcelona has so much to offer with great cafés and restaurants at every corner to amazing architecture. I love having a walk in this city, there are so many places and streets to discover. One place I discovered and became quickly a favorite is the café “Brunch & cake”. I absolutely adore this place, the atmosphere and the vibes, but more importantly the food they serve! It’s served fun and playful on your plate. It’s made with passion and that’s why I love it. Of course a plate can look good and not taste good, but here they do both things good which is a win win!

In Barcelona you can find five cafés of this name, I personally love “Cup & cake” the most, it’s small and intimate, for me more cozy and somehow they serve the food the best by all of the cafés this chain has! The other one which comes after is bigger and is also nice, it is at the street called Rosselló.

The menu offers a lot of healthy options and I did go “bananas” and got indecisive with what to choose! I can’t blame myself, you’ll understand too once you see the menu.. From pancakes, to healthy vegan burger, to açaí bowl, sugar free muffins, avocado toasts to delicious salads, I mean come on, how can you choose??

So next time you are in Barcelona, “Brunch & cake” or “Cup & cake”, is the place!

Well Being

Eat good, feel good!

I really believe that we are what we eat. Therefore I dare you to think twice next time you are going to have a meal. Look after yourself by caring about what you put in your body, you will feel different, I guarantee you will feel amazing! I made myself a colorful “rainbow” salad and damn I felt satisfied and happy afterwards! Happy stomach = happy mind!
