Alps Brunch & Açaí bowl

Barcelona is heaven on earth when you wanna eat great brunch in town. There are so many amazing cafés to go eating and enjoy delicious, colorful dishes from their menus. With some research and evaluation, I came across eatmytrip on google. They did not disappoint. A cozy little place but with an abundant space full of passion and love, I felt immediately at home. I loved their originality in interior, platings and flavors. It was an adventurous experience by the atmosphere and the different tastings of food components. And who doesn’t love new things to try and explore right?

Their menu offers vegetarian, vegan and gluten-free options, so it’s a place for everyone to enjoy. I tried their alps brunch; so delicious with the combination of truffle, Parmesan and cheese together with roasted potatoes, mushrooms, poached eggs and pickled onion. It’s symphony to my ears and truly satisfied my tastebuds. The gluten-free seed bread was also pitch perfect with it.

Then, the açaí bowl like no other I’ve tasted before! So creamy, so yummy and I loved that it didn’t have lots of seeds from the berries sticking to my teeth! The color of the smoothie was beautiful, the toppings bringing it next bevel with mouthwatering sweet mango and strawberries, accompanied by crunchy buckwheat granola, coconut chips and gluten-free chocolate chip cookie. Another star component of the dish being so gooey and moist.

But the brunch didn’t stop right there you see.. I had to finish it in style with their chocoloco pancakes and man that made me loco by how amazing they were. From how beautifully they plated it, to harmonizing the flavors of crunch by red velvet crumbs to creamy coconut mousse and hazelnut ice cream. However, topping it off with fluffy well made American pancakes. I loved that they went loco with the chocolate sauce because that’s the way it should be if the dish says so right? Still day dreaming about them, no doubt I’m coming back for more!

Power matcha bowl

Superfoods boost!

As I’ve been reading the kaizen method, it has inspired me to do small changes every day and this is one of them. To add at least one superfood ingredient to my meal every day. I know that it can be overwhelming or difficult to do big dietary changes or maybe feeling off board with the rest of the other healthy people around the world. Especially when looking at instagram influencers promoting this and you don’t know where to start. Therefore, when the temptation to sugar or unhealthy foods strikes in, that seems rather fairly as it’s what you’re familiar to. However, I promise you that if you choose to make one small positive change of habit each day, eventually it will become a lifestyle, a way you sooner or later are drawn to and it no longer feels like a choice. At least that has been my experience and I encourage you to start off this journey and process by making this superfood breakfast bowl which also is a sustainable way of eating too! • 1 cup frozen mango

• 1 frozen banana

• Juice of half an orange

• 1 tsp power matcha

Matcha yoghurt Breakfastbowl

Far from boring guys

It’s so easy to put flavor into your natural yoghurt. And my favorite these days is matcha. I use the superfood powder “power matcha” from https://www.yoursuperfoods.eu/products/organic-power-matcha-mix. This mix is all natural and organic, a nutrient-dense blend of greens and brain boosting superfoods to optimize your focus! It’s an excellent source of antioxidants and is high in vitamins, iron and potassium. How to make it

1. You’ll need Greek or dairy free yoghurt version like coconut. Mix it with 1 tsp of matcha and blend well together.

2. Add your favorite toppings with it. I used raw honey to sweeten it up, cashew nuts, cacao nibs, hemp seeds, flax meal and blueberries!

Matcha smoothie bowl

The more toppings, the better!

I absolutely love matcha and I love smoothie bowl, so what better way than concluding them together? It got healthy greens in it like spinach, but with the sweetness of mango and banana, balancing it out. Oh, and let us not forget the superfood mix “Power matcha” by yoursuper. Ingredients

Handful frozen spinach

Handful frozen mangoes

1 frozen banana

4 pieces of broccoli

1 tsp power matcha by yoursuper foods

2 tbs of vanilla yoghurt

1 or 2 dl oat or almond milk depending how thick you like it

Squeeze some lemon juice and if you want it sweeter add maple syrup to taste or one medjool date.

Instructions

Blend all ingredients together in a smoothie blender. E

Enjoy it with your favorite toppings, the more the better I say! I had my homemade grain free granola on top, with cacao nibs, coconut chips and pieces of dates!

Oh and for more flavor and color.. Passionfruit and pomegranate really made the difference.

The process of making the matcha bars is super easy. There is no baking time in the oven on them and they are made with few ingredients. So here’s a shout-out for those at you at home who claim they cannot bake… This is truly your time to shine at the kitchen!

Ingredients

• 1,5 tsp power matcha

• 12 pitted medjool dates

• 2 dl oats

• 0,5 dl shredded coconut

• 3 dl cashews

• 2 tbs coconut oil

• 1 tsp lemon juice

• A pinch of salt and a touch of cinnamon

Instructions

1. Put all of the ingredients in a food processor until you’ve achieved a sticky dough

2. Line a baking pan or a form with parchment paper. Press down evenly the dough.

3. Refrigerate before cutting the bars and add toppings like cacao nibs and coconut chips.
